The Iberico Jabuguito, is an exceptional piece. Prepared with a mixture of the best meats in the Iberico pig, it has a personality of its own!
It combines the best flavour of our chorizo with a little spicy touch that makes it irresistible!
It is not intented only as a cooking ingredient, although it is ideal for many traditional Spanish recipes, and delicious when fried. It is actually a totally cured meat (cured for approx. 3 months, less than the “chorizo” due to only to its smaller size), great for “tapas”.
As in all our cured meats, the key to the taste and quality of our Jabuguito is in the meat we use: The selection of the meat used, coming from our own 100% Iberico Bellota pigs, is supervised by our Maestro Jamonero, directly at the slaughterhouse. Only best quality 100% Iberico Bellota meat is employed: it’s the fat infiltration in the same meat that gives the jabuguito its special texture, without any added fats of other origin (which is the usual procedure in the chorizo industry). A tasty and healthy product (fat from 100% IBerico pigs being mainly oleic acid, which is the same as in olive oil).
Our “Jabuguito” has been rewarded with a One Gold Star award at the UK GTA in 2014: a guarantee of taste and quality.
